Our final test was connecting the LaCie to the test Mac Pro directly over Thunderbolt and running the benchmarks again. This configuration was, by far, the fastest we tested. Thus pulling it off my desktop connections will automatically switch it to Wifi since the ethernet connection is no longer there. It does stay on the ethernet if I turn Wifi back on.
